Our recipe for your succulent moutabal (eggplant caviar)!

The moutabal is an aubergine purée prepared in a mousse and mixed with tahina. It is one of the most traditional mezes in the Middle East.

The recipe for a single eggplant (you increase according to the doses you want), you will need:

  • An eggplant
  • A clove of garlic
  • 1 lemon
  • 3 tablespoons of tahina (sesame cream)

To do this, you start by putting an eggplant on a gas fire to grill until you can peel it easily. Crush a clove of garlic with salt, add the lemon that you have squeezed and 3 tablespoons of tahina.

Mix everything, serve it in plates for mezes with a little olive oil and pita bread and, according to your taste, pomegranate seeds.
