Our recipe for your delicious homemade falafel!🔝

Falafels are a Levantine culinary specialty (Levant region) consisting of ground beans and chickpeas mixed with various spices and fried in oil.

They can be eaten as a dish accompanied by pickled vegetables (cucumbers, pickled turnips, etc.), fresh vegetables (tomatoes) and the essential tarator sauce!

But also in a sandwich! With the same elements but in pita bread which is even better 😋

Let's start the recipe for 1kg of falafel, you will need:

  • 1 kg of chickpeas
  • 500g peeled broad beans
  • 5 onions
  • 1 whole garlic
  • 1 teaspoon of cumin
  • 1 teaspoon ground coriander
  • Half a bunch of cilantro
  • Salt / Pepper (the quantity according to your tastes)
  • Sodium bicarbonate
For the preparation of the falafels:
  • Soak the chickpeas and broad beans the day before with half a spoonful of sodium bicarbonate
  • The next day, wash the broad beans and chickpeas
  • Thoroughly mix the onions, broad beans, garlic, coriander (in a bouquet) and chickpeas
  • Once well ground (like a paste), add a large glass of water (a mug), 1 half spoon of sodium bicarbonate, the spices with salt and pepper and mix everything
  • Form balls with the dough
  • In a skillet, fry the balls in sunflower oil (like french fries) until golden and don't hesitate to turn them over!
To taste your falafel it is essential to make the tarator sauce, follow our recipe! for this you will need:
  • A clove of garlic
  • 2 lemons
  • Tahina (sesame cream)
To do this, crush a clove of garlic, squeeze your 2 lemons, add a good coffee cup of sesame cream to your preparation, add salt and a little water until the thickness is a little liquid but still creamy.
As for the accompaniments, cut tomatoes, parsley, chilli, finely cut the cucumbers and pickled turnips.
